Roast pork with rattlesnake sauce


1 onion, for the sauce
2 tablespoons lard, for the sauce
10 bell peppers, for the sauce, hydrated and devoured
4 chilli guajillos, for the sauce, hydrated and devoured
4 cloves of garlic, for the sauce
1 cup water, for the sauce
1/4 cups orange juice
to taste salt
1 kilo of pork tenderloin, in medium cubes of 3 cm
1 1/2 teaspoons oregano
1 teaspoon cumin
2 bay leaves
2 tablespoons butter
to taste salt
to taste of pepper


In a pot heat the oil and add the onion, garlic, bell pepper, guajillo pepper fry until the onion is golden, add the water and salt. Cook for 10 minutes.

Blend the chilies, with the orange juice, oregano, cumin. Reservation.

In a saucepan add the lard and fry the meat over medium heat until golden brown for 15 minutes.

Add the liquified sauce, bay leaf, season with salt and pepper. Cook for 20 minutes over medium heat.

Serve on an extended plate accompanied by Rice and beans.
